    In a medium bowl, toss together olives, lemon juice and oliv eoil infused garlic to make vinaigrette.
    2.
    In a plate, arrange roundels of capsicum and cucumber neatly, sprinkle lemon juice and olive oil. Season with salt and pepper, to taste.
    3.
    Right before serving pour vinaigrette over olive mixture and serve.
