    The regular consumption of carrots can actually have an possitive impact on health. As you said, they can improve the vision, prevent cancer, slow down aging process, etc. They are also a powerful antiseptic that can prevent infections.
    Some fun facts about carrots:
    Rabbits love to eat carrots but they shouldn’t eat too much.
    The biggest carrot recorded is more than 19 pounds and the longest is over 19 feet!
    There are over 100 species of carrots.
    English women in the 1600’s often wore carrot leaves in their hats in place of flowers or feathers.

    Agree with mochi about cooking carrots. Raw carrots are hard to digest, but they also have Pitta in them, so you can have a small amount of shredded carrot at the beginning of a meal, when agni is strongest. But in general, cooked carrots are best.

    That dessert recipe sounds good, thank you for sharing. I am assuming carrots have a sweet taste, otherwise they would be incompatible with milk.

    Eat 5/6 small meals including snacks, Avoid soda, diet soda and flavored juices,
    Walk is great to increase metabolism, do walk for 30 minutes daily, Do take whole grains, beans....

    Carrot is good nutrition vegetable that is beneficial for health. Carrot juice is good for eye sight and makes it better. Carrot is also good for skin and prevents us from many skin problems like pimples and acne.

    Carrots should always be cooked for Vata-imbalance, and Vata imbalanced should not have carrot juice. But cooked carrots are great for the Vata problem. Here is a delicious way to cook them: Boil then simmer the grated carrots in milk, and it becomes so sweet that you hardly need to add any sugar for a delicious halva/dessert. Great with cashew and cardamom, and to make it even better first cook the greated carrots in ghee for a while, and add some fresh cream to the milk. Remember sugar and cardamom should be added at the end after removing from the heat. Such a simple delicious and healthy sweet dish.

    Great post on health benefits of carrots and like to say carrots improve our vision and great anti aging as carrots nourish our skin so we must add carrots in our daily meals. Carrots improve our immunity and prevents from cancer, stroke and cardiovascular disease. Carrots keeps our mouth clean if munch after every meal.

    Beta-carotene (the orange color in carrots) makes vitamin A which is good for your eyes. The good thing is you can't o.d. on beta-carotene like you can straight vitamin A.
